Norish Veg Loaded Fritters with Growing Greens

Looking for a fun and nutritious meal for your little ones? These Veg Loaded Fritters are perfect for baby-led weaning or for hungry toddlers and kids! With a mix of green veggies, carrot, and pumpkin, they’re not just delicious but also a source of iodine from kelp, along with calcium, iron, and magnesium from bone broth.

 

Makes about 18 small fritters

Ingredients:

  • 50g peeled potato
  • 50g peeled butternut squash
  • 100g frozen sweet corn
  • 1 sachet Norish Growing Greens
  • A handful of baby spinach
  • 1 garlic clove
  • 1 spring onion, chopped
  • 50g plain flour
  • ½ tsp baking powder
  • 1 egg
  • 50g grated cheddar
  • 50ml milk

Instructions:

  1. Boil the Veggies: Start by adding the potato and butternut squash to a pot of simmering water. Cook for about 5 to 6 minutes until they’re nearly tender, then throw in the sweet corn and cook until everything is nice and soft.
  2. Mash It Up: Once the veggies are cooked, drain them in a colander. Mash the potato and squash with a fork and let them cool a bit.
  3. Blend the Mix: Toss everything into a food processor and blitz until you have a nice, even mixture—think slightly chunky, not totally smooth!
  4. Get Cooking: Heat up a large frying pan and add a little butter, ghee, or olive oil. Fry small dollops of the batter for a few minutes on each side until golden brown and cooked through. Let them cool a bit before serving them to your little ones.
  5. Freezer Friendly: These fritters freeze really well, so feel free to double the batch for quick meals later!
