Ingredients:
- 50g peeled potato
- 50g peeled butternut squash
- 100g frozen sweet corn
- 1 sachet Norish Growing Greens
- A handful of baby spinach
- 1 garlic clove
- 1 spring onion, chopped
- 50g plain flour
- ½ tsp baking powder
- 1 egg
- 50g grated cheddar
- 50ml milk
Instructions:
- Boil the Veggies: Start by adding the potato and butternut squash to a pot of simmering water. Cook for about 5 to 6 minutes until they’re nearly tender, then throw in the sweet corn and cook until everything is nice and soft.
- Mash It Up: Once the veggies are cooked, drain them in a colander. Mash the potato and squash with a fork and let them cool a bit.
